Disassemble the cauliflower into inflorescences.
Blanch in boiling salted water for 2-3 minutes, throw in a colander.
Wash and dry the orange, remove the zest.
Seeds of cumin (cumin) grind in a mortar. I love Zira, so I took it twice as much as indicated in the ingredients.
Put cabbage on a baking sheet, sprinkle with zest and Zira, pour oil, mix with hands and put it in the oven, heated to 170-180*C.
After 10 minutes, remove the baking sheet, sprinkle with walnuts, return to the oven and bake for another 5 minutes.
Wash and dry arugula.Prepare the dressing. Squeeze the orange juice, add oil, salt, pepper, mix with a whisk.
To collect salad: on a platter cabbage with walnuts, arugula, pour with the dressing.
I did salad in two options - for men added raw smoked meat. I can say that both are perfectly good.
