Fragrant, delicious rolls with cheese and spinach will not leave anyone indifferent. You can take any cheese to your taste: Adyghe, cottage cheese, brynza cheese, hard or you can mix several types of cheese.
First, put the sourdough, for this we will crack the yeast, add warm milk and sugar. Stir, cover with a towel and leave for 10-15 minutes.
When the sourdough is suitable, add 1 egg and 1 protein, and leave the yolk for lubrication.
Add the melted butter, salt, and stir.
Gradually add the flour and knead the dough. The flour should be sifted.
The dough turns out to be sticky, it needs to be kneaded for about 5 minutes. If it sticks to the surface, use a scraper or knife, do not add flour. After a few minutes, it will change its structure, become soft and stop sticking to your hands.
Put the dough in a bowl greased with sunflower oil. Cover with a towel and leave to rise. I was up for 40 minutes, the time depends on the temperature in your kitchen.
Meanwhile, prepare the filling: spinach wash and finely chop. Add salt and mix well.
I took Adyghe cheese, you can take any one you like and what you have in the refrigerator. Grate the cheese or mash it with a fork. Stir well with the spinach, if you need to add salt, if desired, you can pepper.
Coming up the dough to get a little obamam, divide into two parts.
One part is rolled out into a rectangular layer about 0.5 mm thick.
Spread half of the filling on the dough, evenly distributing.
Roll the dough into a roll from one side to the middle and from the other side similarly.
Cut the roll into pieces about 2 cm thick. Spread on a baking sheet covered with parchment. Similarly, we do everything with the second piece of dough.
Add a tablespoon of milk or sour cream to the yolk, stir and grease our buns well.
Sprinkle with sesame seeds on top, put the buns for 5 minutes to come. Bake in a preheated 200 degree oven for 20-25 minutes.
Ready buns are allowed to cool slightly and put on a tray.
