In a frying pan, heat the oil, send the chicken to fry over medium heat, stirring occasionally.
As soon as the chicken starts to turn Golden, add the finely chopped onion. Fry everything together for 2-3 minutes.
Thinly slice the carrots. Add to the pan with the chicken. Stir and fry all together for another 3-4 minutes.
Then add the coarsely chopped mushrooms. Season with salt and pepper to taste, add thyme. Stir well.
Pour in the water, cover with a lid and simmer all together on a low heat for 8-10 minutes (focus on the readiness of the carrots).
Add the melted cheese cut into small pieces or grated on a large grater (as it is convenient for anyone).
Gently mix until the cheese is completely melted.
As soon as the cheese is dispersed in the sauce, add the finely chopped herbs, mix quickly and remove from the heat!
