Prepare the necessary ingredients. Wash the duck fillet and dry it with a paper towel.
Make neat shallow notches on the duck skin. This is necessary so that when frying, excess fat is melted from the skin and it turns out to be crispy.
Preparing the marinade. Mix soy sauce, mustard, salt, sugar, pepper, garlic and thyme.
Brush the fillet on both sides and leave to marinate for 30 minutes.
Fry the duck fillet in a well-heated frying pan. First, fry on the skin side for 2 minutes, turn over and fry for 1 minute on the other side.
Put the breast on a baking sheet and send it to the oven preheated to 200 degrees for 8-10 minutes. The time depends on the preferred degree of roasting.
Serve to the table. I made spinach and corn as a side dish.
