Boil the beets and eggs until fully cooked. Cut the beets into thin slices. Fold each circle in half. And put it on a plate.
Peel and cut the eggs in half and put them on the beetroot.
Cut the lemon into slices.
Peel the onion and cut into cubes.
Cut the herring into cubes.
Put the lemon, herring and onion on top of the beetroot.
Garnish with lettuce leaves and olives. Drizzle with olive oil and mustard.
