  1. Mix all the ingredients for the dough: flour + egg + softened butter + sugar + salt (on the tip of a knife). Put the dough in the refrigerator for 30 minutes.
  2. Pass the lemon zest through a meat grinder or chop it in a food processor. You can also grate or grate only the zest, and pass the pulp through a press to get juice, which I did.
  3. For the filling, whisk the eggs with white sugar. Add butter (pre-melt) + starch.
  4. At the end, add lemon.
  5. Roll out the dough into a layer, fill the form with the sides (I took a form with a diameter of 26 cm), make light punctures with a fork, then pour the filling and put it in a preheated 180 degrees. bake in the oven for 30-35 minutes. 5 minutes before the end of baking, take out the cake and sprinkle with sugar, then send it back to the oven. Sugar should caramelize. Before you cut the cake, cool it down!
