Mini Tortilla of Cauliflower Recipe
An interesting recipe (which it was impossible to pass by) caught my eye. Fast, delicious, unusual, a minimum of ingredients and, mind you, not a drop of butter and not a gram of flour.

  1. Wash the cauliflower (about 3/4 of an average head), dry it and disassemble it into small inflorescences, cut off the legs. Grind in a blender to a size slightly smaller than rice grains.
  2. Measure out 2.5 cups, pour into a bowl suitable for a microwave oven. Put in the microwave for 2 minutes, remove and mix well. Put it back on for 2 minutes, mix again.
  3. Pour into cheesecloth, let it cool down a little and squeeze well, be careful, the cabbage will be very hot! Add two eggs, salt and pepper to taste. Mix well until smooth. You can add your favorite spices or finely chopped herbs.
  4. Preheat the oven to 190*C (375*F) and cover the baking sheet with parchment. Put the dough on paper in small circles (6 pieces). Put it in the oven for 10 minutes. After 10 minutes, take it out and turn it over. Put it back in the oven for another 5-7 minutes.
  5. Cool slightly. Preheat the frying pan, put the tortillas on a dry frying pan and lightly fry on both sides with a fork. They are fried very quickly, literally for 10-15 seconds on each side. Serve with your favorite sauce, meat or fish instead of bread, as well as salad. In general, it was universal.
