Wash and dry the meat.
Use a knife to cut off the skin and insert the cloves.
In a bowl, mix the orange juice, orange zest, honey, jam, mustard, ginger and salt.
Place the meat on a baking tray. Pour over the sauce.
Bake in a preheated oven at a temperature of 150 g for one hour and 20 minutes, periodically pouring sauce.
Then increase the oven temperature to 180g and bake for another 20 minutes.
