  1. How to make oven-baked pita bread pizza? Gather the necessary ingredients and preheat the oven to 180 degrees Celsius. To make a 24 cm diameter pizza, cut two identical circles from two sheets of thin Armenian lavash using scissors, ensuring they match the size of your baking dish with low sides. You can outline the contour first by placing the dish’s bottom directly on the lavash and then cut along the contour.
  2. To prevent the pizza from sticking, place a double-folded Teflon baking sheet in the dish, or you can simply grease the dish with sunflower oil or use high-quality baking parchment. Place the first circle of pita bread in the dish and grate one-third of the cheese finely on top. If you have any pita bread scraps left, you can also spread them evenly over the cheese.
  3. Now, place the second circle of pita bread on top. The base is ready. The cheese will help hold the base together and prevent it from drying out too quickly during baking. Brush the base with tomato sauce and add the sausage on top. Sausage and cheese are the core flavors of this pizza, so don’t be shy with them.
  4. Wash the bell pepper, remove excess moisture, and peel the onion. Thinly slice both vegetables into rings, about 2 to 3 mm thick. Since the pizza bakes quickly, the vegetables should be very thinly sliced to cook properly. Spread the sliced peppers and onions on top of the base. If you prefer not to add tomatoes for extra acidity, that’s fine.
  5. Grate the remaining two-thirds of the cheese over the top. Bake the pizza in the preheated oven at 180 degrees Celsius for a maximum of seven minutes. Avoid baking it longer, as pita bread can become overly dry and brittle. Keep an eye on the cheese crust, and once it’s browned, it’s ready to be taken out. Serve the pizza hot and feel free to drizzle some barbecue sauce on top if desired. Enjoy your meal!
