Take the chicken shanks and salt them. Add the barbecue seasoning and fry on both sides in vegetable oil over high heat until Golden brown. In the same pan, fry the onion and carrot for a couple of minutes and add the chopped potatoes, salt, and seasoning to the barbecue. Stir and fry over high heat for 3 minutes.
Put the potatoes and meat in a baking dish, add a little water, cover and bake at 200C for about 40 minutes.
