  1. Let’s start with making cakes for cakes. Divide the eggs into yolk and white. Combine the yolk with 40 g of cottage cheese, add vanilla. Stir until the curd becomes homogeneous. Whisk the protein with 5 grams of sugar to peaks. Mix the whites with the cheese-egg mixture with a spatula.
  2. Put the resulting mass on a baking sheet. You should get 8 pieces, bake in a preheated oven to 200 g for 20 minutes or until browning.
  3. While everything is baking, we are preparing our “cream”. Beat 150 g of cottage cheese with 5 g of artificial sweetener and 7 teaspoons of strong coffee. Coffee may need a little more, the consistency of sour cream should be obtained.
  4. Lubricate the cooled cakes with cream, collecting the cake from 4 layers. Sprinkle cocoa on top. Well, or according to your taste.
