Cut fresh tomatoes into half rings, and boiled beets into strips. Place in a deep bowl.
Lettuce leaves cut across 2 cm and send to a bowl with tomatoes and beets, salt, grind black pepper, squeeze out lemon juice, grate lemon zest, season with olive oil and mix well.
Arrange the salad on plates, top with thinly sliced goat cheese with a vegetable peeler. Colorful, light and very tasty salad is ready.
