Wild rice contains copper, calcium, iodine, iron, amino acids – lysine, methionine and threonine, folic acid. In addition, it contains a large amount of protein, so eating it gives strength to the muscles.
Pour wild rice into boiling water (for 1 cup of rice – 3 cups of water), cook on low heat under the lid for 30 minutes, add salt at the end of cooking.
You can take canned corn, or you can cook it yourself, I did it on the “steaming” mode in a slow cooker, the cooking time is 40 minutes. Then cool and chop the grains.
My beans are frozen. I also cooked it in a slow cooker on the “steaming” mode – 10 minutes on a steamer.
Finely chop the onion. Pepper and dried tomatoes cut into strips, and cherry – in half.
Heat olive oil in a saucepan and fry finely chopped onion, pepper, cherry, dried tomatoes, beans in it until soft for 5 minutes over medium heat, stirring. Then add the basil, ground red pepper, salt and cook for another 5 minutes.
Add the cooked rice and simmer for another 5 minutes.
Mix everything, add chopped parsley, and you can serve.
