Soak the beans overnight in plenty of water. Then boil until tender (add salt 20 minutes before the end of cooking), drain the water. Drizzle with good olive oil.
Cut chicken fillet into cubes, marinate in soy sauce for 30 minutes.
Peel the mushrooms and fry them quickly in a very hot frying pan (so as not to lose their juiciness).
Fry the fillets for 5 minutes until lightly browned, do not over-dry! Mix all the ingredients and serve the salad warm!
