Warm Shrimp and Zucchini Salad Recipe
Salad based on the famous Jamie Oliver. Light, low-calorie, spicy, delicious… and so on! I wanted to make a salad of zucchini and seafood and found this recipe on the website of a celebrity. The products were slightly changed. Instead of lime, I took lemon, instead of fresh ginger – dry. The sharpness is adjusted to suit yourself. I just love it!

Ingredients
  • 200gram Shrimpunpeeled, frozen
  • 200gram Zucchinior zucchini with thin skin (young)
  • 2tablespoons Olive oilor sunflower, or nut
  • 1teaspoon Lemon zestgrated with fresh lemon, or in the original lime zest
  • 1tablespoon Lemon juiceor in the original lime
  • 1tablespoon Soy sauce
  • GingerI have dry, in original version a fresh, to taste
  • Chili pepperto taste, I cut a few rings to taste
  • Coriander
  • Herbsin original version parsley, cilantro, mint for applying, I have only parsley
Instructions
  1. My prawns are already boiled and frozen. Defrost and clean. Products need to be prepared all at once. Remove the zest from the lemon, cut a slice of lemon to get juice. Cut the zucchini into thin slices. It’s big, and I cut it into thin slices. From the chili pepper, cut off several rings, removing the cores.
  2. Put the pan on the fire, pour a little. I use olive oil and heat it up. Lay out the shrimp.
  3. Add the zest, ginger and coriander, chili pepper. Stir and fry for about 2 minutes, until the shrimp turn golden brown. Remove from the heat and let them cool for a minute before adding the zucchini and juice.
  4. Arrange the zucchini, pour them with lemon juice or, as in the original, lime juice. Stir and fry so that they remain crispy, quite a bit, 3-5 minutes.
  5. It’s done. Turn off the fire.
  6. Pour soy sauce over it. Mix it.
  7. Put this salad in a salad bowl and serve warm, sprinkled with herbs. I have parsley.
  8. Eat and enjoy this salad!
