  1. Soak the beans for a few hours or overnight. Then drain the water, pour in fresh water and cook as indicated on the package. At the end of cooking, add salt.
  2. Dice the onion, yellow and red pepper.
  3. Cut the olives into slices, and the cherries in half.
  4. Mix all the ingredients, add the arugula. Season with salt and pepper and sprinkle with lemon juice.
  5. Ready.
