Instructions
Prepare the dressing: mix all the ingredients (from squeezed citrus juice) and mix until an emulsion forms.
Put lettuce leaves on a dish (tear them with your hands), Peking cabbage and sprinkle with onion rings. Add half of the salad dressing and mix.
Then lay out thin rings (or half rings) of ripe persimmon, pieces of cheese. Add the finely chopped pistachios.
