  1. Zucchini (I took yellow) cut into medium slices.
  2. Put in a bowl, add a little salt and leave for 10 minutes.
  3. Pass the garlic through the garlic press. If you like a spicy dish , you can add 2 cloves of garlic.
  4. Fry and chop the cashew nuts.
  5. Chop the parsley.
  6. Add the parsley and soy sauce to the garlic and stir.
  7. In a frying pan, pour a little vegetable oil and fry the zucchini (without liquid) over high heat for 2-3 minutes.
  8. Transfer the zucchini to a Cup, season with salt and pepper, and add the nut and garlic dressing. Mix well, cool and put in the refrigerator for 2 hours.
