Beet salad with dried Apricots and Almonds Recipe
Beetroot is a unique vegetable. One of the few that almost does not lose its useful properties when cooking. And in the spring, vitamins are so needed. Therefore, I will offer you a healthy and vitamin beet salad with dried apricots, almonds and an interesting dressing with orange flavor.

  1. Peel boiled or baked beets and cut into cubes.
  2. Slice the almonds with a knife at random.
  3. Soak dried apricots in warm water for 15 minutes, dry and finely chop.
  4. For dressing, mix the oil (I took unrefined sunflower oil), orange juice, orange jam, mustard, crushed garlic and salt.
  5. Combine all the ingredients for the salad and pour the dressing, mix.
  6. If desired, you can add chopped mint to the salad or tear mint leaves from above.
