Cut the eggplant into French fries. I usually do it on a grater. Cut the bell pepper and chili pepper. Salt, press down and let stand for an hour or two.
Wash the vegetable mixture and throw it in a colander. Press. I’ll make a reservation right away, in the eggplant season in my region, they are bitter. So I included this step in the recipe.
Heat the vegetable oil, put the vegetables and add soy sauce. Fry for about 5 minutes. with the lid closed, stirring occasionally.
