  1. Cut the eggplant into slices, season on both sides with spices from the set for marinating grilled vegetables and mushrooms, leave for 30 minutes. then remove the resulting juice from the surface of the eggplant.
  2. Sprinkle the grill pan with vegetable oil and fry the eggplants on both sides. If the eggplants have absorbed excess vegetable oil, then put them on a paper towel.
  3. Cut the bell pepper into large pieces, brush with vegetable oil and fry in a grill pan, then remove the baked skin and cut into strips.
  4. Cut the cucumber into half rings.
  5. Cut the pitted olives into arbitrary pieces.
  6. Cut the young garlic and onion into thin rings, the red onion into thin half rings.
  7. Cut the cherry tomatoes into halves.
  8. Cut the lettuce leaves with your hands into convenient pieces, put them on a serving dish. Place the prepared vegetables, capers and olives on top in any order. Cheese (cheese or sirtaki) cut into cubes, put on lettuce leaves, season with olive oil and freshly ground pepper.
