Lobio is a Georgian dish that is made from beans. One lobio may differ from another in bean varieties and ingredients. As they say: “There are more lobio recipes than Georgian ones.” But everyone will like this one!
Soak the beans for 12 hours. Then boil until tender (in my case, large white beans were cooked for a little more than an hour);
Cut the onion and carrot into squares. Simmer over low heat for 5 minutes;
Cut the tomato into squares and add it to the onion and carrot;
Slice the cilantro and add it to the vegetables;
Chop half the beans in a blender. Put the whole and chopped beans in a saucepan with the other ingredients. Fry until all the liquid has evaporated.
In one serving of 230 grams, 211 calories, 12.1 protein, 0.8 fat, 38.6 carbohydrates.
