Mexican Family Rice Recipe
Rice that Mexican housewives cook at home. We can say that this is a simplified version of the famous Mexican rice in its restaurant version, when hot chili pepper, sweet pepper and corn are added to the rice. Delicious rice! The dish and side dish are just wonderful.

  1. We need high-quality long-grain rice. Rice must have another mandatory quality – it must be clean, since for Italian risotto it should not be washed before cooking. If there are no ready-grated tomatoes, cut one large tomato in half and grate on the side of the cut, the skin will remain in your hand.
  2. Put onion, garlic, tomato pulp, water and salt into the blender bowl.
  3. Grind into a homogeneous mass.
  4. Pour oil into a saucepan, heat it up and put dry rice. When mixed with oil, the rice becomes translucent. Fry the rice, stirring, until white, 7-10 minutes.
  5. Pour in the vegetable mass and mix. Cook the rice over medium heat, stirring, until the tomato mass is on the surface, and the rice has absorbed almost all the liquid. Then reduce the heat to a minimum, stir the rice, cover with a tight lid and keep on fire until completely dry.
  6. Remove the pan from the heat and leave for 10-15 minutes. Transfer the rice to a serving plate, sprinkle with chopped herbs, I have parsley, if desired, sprinkle with the juice of lime halves. That’s great!
