  1. Peel and wash the sweet potatoes or potatoes. The quantity indicated is approximate, since it depends on the size of the mold and how they can be stacked. Cut the vegetables into slices: cut the sweet potatoes 1 cm thick, and if you use potatoes — 0.5 cm. Cut the broccoli into small pieces. Place potatoes or sweet potatoes in a preheated and oiled frying pan with a fan, add salt, pepper and fry on low heat under the lid until half-cooked. When it is almost ready, sprinkle it with broccoli and pour in the eggs, beaten until smooth. Add more salt on top. You can sprinkle with herbs. Fry under the lid until tender.
  2. It is best served with a light vegetable salad. Enjoy your meal! Instead of broccoli, you can use other vegetables: bell peppers, tomatoes, etc. You can add sausage, cooked meat or sprinkle with cheese.
