Soba is a Japanese noodle made from buckwheat flour. We have many different recipes, and they are all very unusual and fragrant. Today I suggest you try soba with peanut paste sauce with vegetables.
Boil the soba in boiling water for 6-8 minutes (according to the instructions), flip it into a colander and rinse with cold water. If there is no soba, you can use any thin spaghetti or other pasta.
For the sauce, mix the peanut paste, vinegar, soy sauce, ginger, garlic, lemon juice, lemon zest, coriander and vegetable oil in a food processor and grind to a puree.
Pepper and cucumber cut into thin strips, grate carrots on a coarse grater.
Mix the cooked vegetables, soba and sauce.
When serving, sprinkle with coriander and ground peanuts (optional).
