Soba is a Japanese noodle made from buckwheat flour. There are many different recipes with you, all of them very unusual and flavorful. Today I suggest you try soba with peanut paste sauce with vegetables.
Boil the soba in boiling water for 6-8 minutes (according to the instructions), throw it on the drushlag and wash it with cold water. If there is no soba, you can use any thin spaghetti or other pasta.
For the sauce, put the peanut paste, vinegar, soy sauce, ginger, garlic, lemon juice, lemon zest, coriander and vegetable oil in a food processor and grind to a puree.
Pepper and cucumber cut into thin strips, grate the carrots.
Mix the cooked vegetables, soba and sauce.
When serving, sprinkle with coriander and ground peanuts ( optional).
