  1. Soak rice overnight in water, rinse in the morning, boil until tender, but do not digest! Chop the almonds into fine crumbs. Beat the egg lightly with salt.
  2. Mix boiled wild rice, protein, almond crumbs, corn starch.
  3. From the resulting mass, form a biscuit, put it on baking paper and bake in the oven until ready at a temperature of 180 for about 5-10 minutes. Since all the components of the biscuit are ready, with the exception of protein, you will need a minimum of time and heat, just so that the biscuit takes a holistic form and does not fall apart! I.e. dry the galette, adjusting the time and temperature to your liking
  4. Pre-bake the beets in the oven (1 hour at a temperature of 200 degrees) or boil. Cool, peel and cut into 5-7 mm thick circles.
  5. Put a slice of beetroot, cheese, freshly ground pepper and thyme on a baked biscuit. Place in a preheated oven under the grill until the cheese melts. Galetta can be decorated with dried tomatoes, capers, herbs to your taste.
