Rice on Cantonese Recipe
This is quite easy to prepare, but such a delicious dish was presented to me by girls from Taiwan… I used to like to try this fried rice in a Chinese restaurant, but now I cook it at home! It will appeal to both adults and children!

  1. Put the rice in a bowl and rinse several times with cold water. Then flip it into a colander and rinse again under running water. Put the rice in a saucepan with boiling salted water. Cook for 10 minutes.
  2. Meanwhile, cut the boiled ham into small cubes.
  3. Prepare the green peas at the same time. It can either be boiled in a steamer, or directly in boiling water for about 3-4 minutes, without bringing it to full readiness, when the peas still retain their fresh green color.
  4. Peel the onion and finely chop it, it is best to use a blender for this.
  5. Meanwhile, put the cooked rice in a colander and drain. Set aside for a while.
  6. Break three eggs into a bowl and mix with a fork. Add half the chopped onion to the eggs.
  7. In a frying pan (preferably in a wok, that is, in a special deep frying pan with thin walls, often used in Chinese cuisine for fast frying products!) preheat 2 tablespoons of peanut butter and pour over the eggs and onions. Fry the egg mixture, stirring all the time…
  8. As soon as the eggs are fried (it will take about 1-2 minutes), put them on a plate and mash them again with a fork, breaking them into small lumps.
  9. Pour the remaining oil into the frying pan (wok) and add the ham first and then the green peas in order. Next, put the remaining onion and, stirring, lightly fry everything in a frying pan. Make sure that nothing is burnt!
  10. Add rice to this mixture and stir. While stirring, pour in the soy sauce and let it spread evenly.
  11. At the end, add the egg “crumbs” to the rice mixture.
  12. Mix everything together and serve immediately! Pepper to taste!
