I offer you an unusual salad. I’m a big fan of eggplant, so I couldn’t get past this recipe. Eggplants are slightly caramelized with sugar and combined with garlic and sauce give an incomparable taste!
Cut the eggplants into cubes and put them in a frying pan with preheated oil, add sugar, stir and fry for 10 minutes over medium heat. Remove from the heat and pour into a salad bowl, let it cool.
Meanwhile, cut the tomatoes into cubes and put them in a separate bowl. Squeeze the garlic through a press and chop the greens with a knife.
Mix eggplant with tomatoes, add garlic, herbs, mayonnaise and soy sauce. Mix gently.
You can serve it with grilled meat and eat it just like that! I’ve cooked it many times, it’s delicious!
