  1. Peel the pumpkin and bell pepper and cut into small cubes. Next, chop the onion, herbs, squeeze the garlic through a garlic press. Blanch tomatoes, peel and cut into cubes.
  2. Fry the bell pepper in vegetable oil for 3 minutes, then add the onion and fry for another couple of minutes.
  3. Then add the pumpkin to the onion and pepper and, stirring, fry everything together for about 3-5 minutes.
  4. Boil 1450-1700 ml of water in a saucepan, depending on what consistency of soups you like (thicker or thinner). Add everything that is fried to boiling water and cook until the pumpkin becomes soft (about 20 minutes). Then add garlic, tomatoes, spices (you can take your own to taste), salt and cook for about 7 minutes. After that, add the cheese, herbs and cook over low heat, stirring until the cheese melts.
  5. When you remove the pan from the heat, let the soup cool down a little. Whisk it with a blender.
  6. Here is your soup and ready! You can serve it garnished with pumpkin seeds, crackers or sour cream.
