Vegetables to clear. The weight of vegetables is given in peeled form.
I decided to add potatoes at the last minute, for greater satiety, when my husband said that, perhaps, to eat a plate of such soup. Actually, he doesn't like soups.
Vegetables cut into small cubes.
In boiling water, pour the potatoes and carrots, bring to a boil and cook over low heat for 5 minutes.
Then add the pumpkin and zucchini and cook for another 10 minutes.
Add leeks, salt and pepper to taste, add seasonings to taste. I added nutmeg and coriander. Bring to a boil, then a couple of minutes and remove from heat.
Pour the soup into a blender and beat until smooth. Return to the pan and heat well.
Ready lean, vegetarian version of the soup.
Outside of fasting, or if you do not fast at all, you can add cream to the soup. It will become softer and more gentle.
Pour the soup into plates and garnish with a sprig of dill.
