In the pumpkin season, I want to cook as many interesting and healthy dishes as possible from this queen of autumn. I bring to your attention pumpkin pancakes, but not classic sweet, but spicy with cheese, ginger and garlic.
Peel the pumpkin from the seeds and peel. Grate the pumpkin and cheese on a coarse grater.
Mix pumpkin, cheese, add eggs, flour, chopped greens. I had parsley and dill, I think basil would be good. Add the chopped garlic and ginger (I just grated it on a fine grater), add salt, pepper and mix thoroughly.
And leave it for a while! Do not be upset if it seems to you that the “dough” is too “dry”. When I was making these pancakes for the first time, I hesitated and added a little milk. As a result, after standing, the dough became watery. You can’t do this anymore, just leave the dough for about 1 hour.
Fry the pancakes in vegetable oil over medium heat, spreading with a spoon in a frying pan.
