Soak the beans in plenty of water overnight. Then boil until tender (add salt 20 minutes before the end of cooking), drain the water. Drizzle with good olive oil.
Cut chicken fillet into cubes and marinate in soy sauce for 30 minutes.
Peel the mushrooms and fry them quickly in a very hot frying pan (so that they do not lose their juiciness).
Fry the fillet pieces for 5 minutes until they are slightly browned, do not over-dry! Mix all the ingredients and serve the salad warm!
