  1. Soak the prunes in hot water.
  2. Cut the potatoes into cubes.
  3. White cabbage – cut into strips.
  4. Carrots – cut into strips (I’m on a large grater).
  5. Cut the onion into half rings.
  6. Cauliflower – divide into inflorescences.
  7. Beets are also cut into strips. Cut the tomato into cubes.
  8. Boil 2 liters of water, add salt, toss potatoes and cabbage, cook for 5 minutes. Add the cauliflower, turn down the heat, let it boil.
  9. Fry onions and carrots in vegetable oil.
  10. Separately fry the beets and tomatoes, adding vinegar or citric acid. Simmer over low heat until soft for about 7 minutes.
  11. Transfer the fried vegetables (onions, carrots, beets and tomatoes) to a saucepan with borscht. We cook until the vegetables are ready. Add the chopped garlic. Salt, pepper to taste. Remove the pan from the stove, add the prunes, cover and let stand for 15-20 minutes. Serve with sour cream or mayonnaise, sprinkled with parsley (or other herbs).
