  1. Prepare the products: peel the radicchio from the top leaves and rinse under cold water, wash the oranges, rinse the greens.
  2. Separate the radicchio sheets and dip them in cold water with lemon juice. This will save the lettuce leaves from excess bitterness. Cut the olives into quarters, thinly slice the red onion, pick the jamon or cut into thin strips.
  3. Fillet of oranges: to do this, use a knife to cut the peel in a circle from a whole orange, and then with a sharp knife, holding an orange in your hand, cut the orange slices between the films, holding the knife at an angle (this is easy to adjust). You need to do this over a bowl, collecting juice. Squeeze the juice from the remaining orange into the same bowl.
  4. In the collected orange juice, add freshly ground black pepper, salt, olive oil, balsamic vinegar and leaves torn from the stems of greens.
  5. Whisk with a whisk.
  6. Mix all the ingredients in a bowl together with the resulting dressing.
  7. Put it on a serving dish, add herbs (if desired, you can add balsamic cream).
