New year’s baking can be like this! Especially when you need to attach egg yolks. This roll will perfectly fit into family gatherings over a Cup of tea! This roll is definitely enough for everyone!
Put the egg yolks, sugar and vanilla in the bowl of the mixer.
Then add a bowl of melted cooled butter and vegetable oil.
Beat the mass until smooth.
Then add the yogurt. Stir.
Then put the grated carrots in the bowl. Mix the mass.
Add the flour sifted with baking powder to the bowl.
Mix the mass well.
Spread the carrot dough on a baking sheet covered with parchment or a Teflon / silicone Mat. Evenly distribute the dough.
Bake in a preheated oven for 20-25 minutes at 160-180 degrees, focusing on your oven. We check readiness with a skewer – if dry, the cake is ready.
Take the baked carrot cake out of the oven and turn the baking sheet on a kitchen x/b towel. Remove the parchment / Mat.
The cake is rolled up in the form of a roll. Cool.
Preparing the cream for the filling. In the bowl of the mixer, put the curd cheese and caramel ( if there is no caramel, you can take boiled condensed milk).
Beat the mass until smooth, just 1-2 minutes.
The cooled rolled-up cake is unwound. Spread the prepared curd – caramel cream on the carrot cake. Evenly distribute. Fold the cake in the form of a roll.
Trim the uneven edges of the roll. Melt the chocolate and put it on the roll. Garnish with meringue, berries and mint. Cut and serve the roll. Bon Appetit!
