Instructions
  1. Prepare all the necessary ingredients. Separate the whites from the yolks.
  2. Grate the cheese on a medium grater. It is better to take several types. We chose parmesan and our Russian. Or you can take another one.
  3. Rub the garlic with cheese.
  4. Start whipping the whites, first at medium speed.
  5. Gradually increasing the speed, whisk them until a strong foam forms.
  6. To make sure that the foam is really strong, turn the bowl over. Joke.
  7. Mmmm, cheese, how delicious!
  8. Carefully pour the cheese into the whites
  9. Add spices and salt to taste.
  10. Mix gently.
  11. Pour a spoonful of flour into the mixture. The amount of it may depend on the cheese and protein. You should get a sticky and thick “dough”. One was enough for me.
  12. Knead until smooth.
  13. Drain the liquid from the olives. Mash a piece of dough into a flatbread, put an olive in the center.
  14. Roll the ball.
  15. Roll the ball in breadcrumbs. I got 12 pieces. Put the balls in the freezer for 15 minutes.
  16. During this time, heat the refined vegetable oil for deep frying. Fry the balls until golden brown. Put them on a napkin to remove excess oil.
  17. Serve them hot with homemade mayonnaise (from the remaining yolks) and tomato sauce that you like. To heal.
