These small, French appetizing balls are made of Shu dough (a variant of choux pastry), traditionally seasoned with cheddar cheese, which gives them a sharpness and piquancy, try it, it's delicious! Especially tasty with hot coffee.
Place the water and butter in a saucepan and bring to a boil.
Remove from the stove and add the flour.
Beat well until the mixture is smooth and shiny and the walls of the pan are clean.
Let cool slightly.
Mix yolks and eggs.
Add them to the flour mixture in small portions.
Stir in the grated cheese, salt and pepper.
Roll small balls, about 2 cm in diameter, no more!!!
Fry in heated to 190% sunflower oil until Golden brown.
Dry on paper towels.
The first batch be sure to check, break one bead, if the inside wasn't cooked, reduce heat and cook until done.
