Chicken Fillet with Zucchini and Garnish Recipe
Tender chicken breast fillet stewed in aromatic spices with zucchini and pearl barley. This is a really simple, satisfying, but healthy dish for every day or for special occasions.

  1. Wash and peel the zucchini. Wash the pearl barley with running water and pour cold water to swell (6 hours).
  2. Drain the water from the swollen pearl barley, put it in a saucepan, cover with water (1-1.5 liters), salt (1/3 tbsp. l) and put on fire. After boiling, cook for 30 minutes. Make sure that the cereal is not overcooked, as in the future it will still be stewed with chicken.
  3. Cut the chicken fillet into pieces, wash it under running water, and put it in the pan where the dish will be prepared.
  4. Add salt to taste (about 1/4 tsp), chopped onion (1 small onion), crushed (or grated on a fine grater) garlic (2 cloves), dry Curry seasoning (1 tsp).
  5. Stir the chicken so that each piece is soaked in seasonings.
  6. Put the pan with the chicken on a high heat, add a little water (about half a Cup), bring to a boil under the lid.
  7. As soon as the chicken pieces turn white from the bottom, turn them over, add a little water if necessary, so as not to burn, cover with a lid and simmer over medium heat for 30 minutes. Periodically check whether the water has completely boiled off.
  8. Meanwhile, the pearl barley is cooked, now you need to throw it on a sieve and rinse with boiled water.
  9. While the chicken fillet is cooking, cut the peeled zucchini into medium cubes.
  10. After boiling the liquid from the chicken (after about 25-30 minutes), add the sliced zucchini, dried Basil (1-2 tsp to taste) and salt (about 1/3 tsp) and mix. If there is a lot of water left in the chicken, drain the excess water BEFORE adding the zucchini, as the zucchini will still give off the liquid. Simmer under the lid for 5-7 minutes, until the zucchini is slightly softened (should be al dente).
  11. Then add sunflower oil. After adding the oil, pour the cooked pearl barley into the pan, mix well and close the lid. Simmer for 2 minutes.
  12. While the dish is ready, grate the cheese on a fine grater (you can take any semi-hard or hard to taste, for example, Parmesan).
  13. Turn off the heat and let the ready-made pearl porridge with chicken and zucchini brew for another 2 minutes. Such beauty is obtained in the end.
  14. Spread on serving plates and garnish with cheese while hot, top with cherry tomatoes or herbs for contrast. A delicious, satisfying and at the same time very healthy lunch or dinner is ready! Bon Appetit!
