Chicken “Jamaica Jerk” in a Wood-Burning Oven Recipe
This is my second recipe with the Jamaica Jerk marinade – the first was pork. Let me remind you that it is based on a combination of herbs, soy sauce and spices such as nutmeg, cinnamon, cloves and cayenne pepper. For chicken, the spice composition is slightly different, but the main components remain unchanged.

  1. All the ingredients, except the chicken, are loaded into a blender, and grind until smooth.
  2. Remove the skin from the chicken, and make 2 deep cross-cuts on each portion piece.
  3. Put the chicken in a marinating dish and rub the marinade evenly. Marinate for 12 hours.
  4. Place on the grill and fry in the oven or on the grill (you can in the oven) at the highest possible temperature, until the marinade begins to burn.
