Cut into thin slices, like noodles. Repeat the procedure with the remaining two pancakes.
Put cucumber and sliced pancakes in a salad bowl. Mix everything thoroughly. Season with mayonnaise or sour cream. Sprinkle with salt and pepper to taste.
