Fry the chicken in vegetable oil and remove from the heat. In the same bowl, fry the onion until soft, add the garlic, coriander and cumin. Add the pitted dates, rice and honey.
Simmer for a few minutes. Put the chicken in the rice, add salt and mix. Add water, bring to a boil and simmer under a lid over medium heat until the rice and chicken are cooked. If desired, pour the lemon juice.
