Italian Ethnic Salad with Chickpeas Recipe
The beautiful name of the recipe corresponds to a quite presentable salad. I really love chickpeas, but I don’t know many recipes with it. Therefore, I could not pass by such a salad. Who would have thought that simple ingredients would make such a wonderful salad. Simple, beautiful and very tasty!

  1. If you take dry chickpeas, then measure out a couple of handfuls and soak overnight. In the morning, boil in water with a pinch of salt and soda. I really liked the method of freezing boiled beans: they are immediately boiled, packaged in portions, and at any time you can prepare a salad, after defrosting.
  2. Pour boiling water over a handful of raisins. Put it on a platter.
  3. Next, use pre-thawed spinach. Ideally, spinach, of course, should be taken fresh and torn into small pieces.
  4. Place the cubes of red pepper on top.
  5. Fry the bacon in a dry frying pan for a couple of minutes. Cut into long diagonal strips.
  6. It remains only to prepare the filling. We do it in a small jar. Squeeze the juice out of the lemon, pour it into a jar with olive oil, finely chopped onion, salt and pepper. Close the jar tightly and shake it vigorously several times.
  7. Pour the dressing evenly over the salad, mix and serve.
