  1. Prepare your favorite dumpling dough, I prepared a recipe from the site, I will give you a link below, I recommend it! I needed for the recipe 1 egg, 200 ml of ice water, 400 grams of flour. Cover with a towel and leave aside for half an hour.
  2. While the dough is resting, cut the onion, not very finely.
  3. Cut 1-2 garlic cloves into small pieces.
  4. Pour 1 tablespoon of olive oil into a frying pan, fry the onion, add the garlic, and fry for one minute.
  5. Add the frozen spinach and simmer until defrosting.
  6. Add salt and pepper to the spinach and add a pinch of nutmeg powder. Set aside.
  7. Melt 50 grams of butter, add a tablespoon of flour, stirring constantly, fry the flour, add 100 grams of dry white wine ( you can replace it with milk).
  8. Add 700 grams of cream ( you can replace it with milk, but it tastes better with cream). Constantly stirring, allow to boil, cook for one minute. Season with salt and pepper and add a pinch of nutmeg. Set aside.
  9. Cut the salmon fillet into small strips with a thickness of about 1 cm, you can cut it into cubes ( optional). My husband helped me here.
  10. The dough is rested, roll out not very thin, just like store-bought leaves.
  11. Cut into sheets.
  12. Now we start building. If you have a glass or ceramic mold, grease it with olive oil. I have an iron one, so I covered it with baking paper. Pour 1-2 spoons of sauce.
  13. Spread the dough sheets over the entire form, with half a portion of spinach on top.
  14. Put the pieces of salmon on the spinach (I forgot to take a picture of this step), a little salt and pepper. Pour half the sauce. Repeat the layers, first the dough sheets, the remaining spinach, pieces of salmon. A little salt, pepper, cover with dough and pour the second part of the sauce. Sprinkle liberally with grated Parmesan. Bake at 180 ° for 40 – 45 minutes until Browning. Look at your oven, if your oven bakes strongly, it is better to cover with foil. Less time to bake is not necessary, the lasagna is high, the fish may remain raw.
