Boil water in a kettle. Cut the onion into not too thin half-and quarter-rings, depending on the size of the bulbs.
Put the sliced onions in a suitable container, take them apart with your hands or fork and pour boiling water over them. Wait 1-2 minutes and flip the onion into a colander. Allow the water to drain completely.
Put the onion in a salad bowl. Add lemon juice, soy sauce and honey. Add vegetable oil or oil from a jar of anchovies. Mix thoroughly.
Finely chop the anchovies. If desired, leave a couple of fish to decorate the salad.
Finely chop the greens. I used parsley, but any favorite greens will do. Mix it all together.
