Pumpkin Pancakes Recipe
Such pancakes are served in a local cafe-bar. In Latvia, the whole pumpkin is highly respected. Exhibitions of pumpkins are held in Riga, in the zoo every year local strongmen weigh the largest pumpkins and award the winner of the largest… So, such pancakes can be served with sour cream, ice cream or jam. I decided to add apples to the composition.

  1. Products based on 200 g of pumpkin: 1 egg, flour – 2 tbsp.l., a pinch of salt and pepper, sugar – 1.5 tbsp.l.
  2. Pumpkin, like cupcakes, is a kind of nutmeg that can be eaten raw, like carrots.
  3. Peel the pumpkin and grate it on a fine grater.
  4. Add the grated apple.
  5. Mix with eggs, flour, salt, sugar and pepper.
  6. Heat the oil in a frying pan and put it on the mass with a spoon, level it in the form of a tortilla-circle.
  7. Fry at a certain distance on both sides. Mix the composition before each serving.
  8. Transfer to a napkin in several layers.
  9. Fry further.
  10. Transfer to a common dish.
  11. It turns out 13 round pancakes.
  12. You can serve it with ice cream and pour caramel syrup – this is how they serve in a cafe. Next to it I have raspberry jam and almonds in caramel.
