Finely chop the cabbage and add salt. Cut the leek into thin half rings. Cut the peel from the persimmon. Cut into slices. Mix the salad with olive oil and vinegar. Rub the salad bowl with garlic. Lay out the salad.
Sprinkle the salad with sesame seeds and ground black pepper. Cook immediately before use. Since cabbage becomes soft during storage!
