Instructions
Cook the squid. Cool, dry, brush with vegetable oil and fry in a grill pan. Cut them into thin slices.
Wash and dry the cucumbers, currants and herbs.
Cut the cheese into threads.
Add squid and cucumber strips to the cheese.
Cut the greens and put them in a salad bowl. Season with mayonnaise and mustard.
Add 2/3 of the berries, mix and refrigerate for 30-45 minutes. I didn’t salt it, we have enough salt from the cheese.
Before serving, grind half of the crackers in a mortar.
Serve on lettuce leaves, sprinkled with crumbs. Garnish with crackers and red currants.
