Pre-bake the pumpkin. This can be done along
the way by cooking something in the oven or specially for this salad.
You can also cook pumpkin for a couple.
Allow to cool completely. Cut into 1.5 x 1.5 cm squares .
Wash the tomatoes and cut into medium pieces.
Peel the onion and cut it into thin half rings.
Wash the coriander greens, dry them and chop them finely.
Put the tomatoes, olives, pumpkin, onion and coriander in a bowl.
Season with olive oil. Mix it.
Transfer to a salad bowl.
Add a handful of cranberries and salt.
