  1. Cook the couscous until Golden brown in a dry pan (without oil). Transfer the fried couscous to a bowl and steam with boiling water. The water should be slightly larger than the couscous, so that it only covers it a little.
  2. Finely chop fresh or lightly salted salmon with a knife. Chop the onion very finely. Cut the capers and add them to the onions and fish. Add salt and pepper to taste. Drizzle with lemon juice.
  3. Mix everything well and put it in the refrigerator to infuse for 20 to 60 minutes.
  4. Prepare a fragrant oil for couscous. To do this, heat the olive oil in a frying pan, put a sprig of rosemary and unpeeled garlic. Heat the oil with spices for about 10 minutes and strain. Aromatic oil, can be prepared for future use.
  5. Mix the couscous with the aromatic oil. The oil may not go all the way.
